Levity Roasters exists to share high-quality uplifting coffee with coffee-lovers in the Denver area and around the country.

Let’s be honest: coffee isn’t a necessity (despite what almost anybody tells you!)— but it is an invigorating luxury! A morning cup of coffee uplifts your spirit as you’re waking up. Coffee is often an excuse to get together with a friend for an uplifting conversation. And it can be uplifting to indigenous coffee farmers when they are paid a fair wage for their beans. All of this is why we at Levity Roasters roast some of the highest quality single-origin coffee on the market! So lift up your hearts!

We specialize in single-origin coffee beans.

Different types of beans grown in different geographical areas taste differently! Coffee beans develop unique flavors due to the types of beans grown, soil composition, elevation, processing and other factors, leading to nutty, chocolatey, fruity, floral and other flavors. We small-batch roast between 5-27 pounds of single-origin green coffee beans at a time, so that we can bring out the unique flavors of each single origin coffee.

Large-scale coffee roasters must make literally tons of coffee taste the same—so even if they boast a “Guatemalan coffee,” they must take different beans from all over Guatemala that taste different and roast them until they all taste the same. To make them taste the same, they must roast them until the roast flavor eclipses the inherent flavor of the beans. Small-batch coffee roasters like Levity Roasters can roast single-origin coffees in quantities that allow the unique flavors of coffee beans to shine!

Daniel’s story

Daniel Coffey is the Founder and Roaster in Chief of Levity Coffee. Daniel’s coffee journey began in elementary school with endless coffee-themes jokes about his name: “Java,” “Decaf,” “Mocha”—he heard it all. Which might be why he didn’t start drinking coffee until his early 20’s when his future wife (whom he was just dating that the time) began working at a coffee shop. But from there, Daniel lived into his name: he began home roasting coffee on a hot air popcorn popper (yes, you read that right) in 2011. He roasted on a 1-pound home roaster from 2012 through 2021 when he began roasting on a commercial roaster and selling coffee to friends and family. That brings us to today when Daniel continues to share the joy single-origin, quality-roasted coffee with the world.
